Merry Christmas, you wonderful ol' tunnel of fudge!





 

Oh! That Fudge!



Tunnel of Fudge Cake


1 3/4 c. sugar

1 3/4 c. butter, softened

6 eggs

2 c. powdered sugar

2 1/4 c. flour

3/4 c. unsweetened cocoa

2 c. chopped walnuts (my recipe says the nuts are "essential" - I don't know if that's an opinion or fact)


Glaze

3/4 c. powdered sugar

1/4 c. unsweetened cocoa

1 1/2 - 2 TB milk


Preheat oven to 350 F.

Grease and flour a 12 cup bundt pan or a 10 inch tube pan. 

In a large bowl, combine butter and sugar and beat until light and fluffy.


 Add eggs, one at a time, beating well after each addition. 



Gradually add powdered sugar and mix well. 




Stir in flour, unsweetened cocoa, and chopped walnuts. 





Spread in prepared pan. 



Bake 1 hour. The cake will not test done, so remove from oven after 60 minutes.

Cool in pan on a wire rack for 1 hour. Invert, remove cake from pan, and cool completely.

For the glaze, blend powdered sugar and cocoa and add just enough milk (only 1 1/2 to 2 tablespoons) to make a glaze. Spoon over cake and drizzle down sides.
