Simple Sunday Supper

 In the old days, my mother would make a big dinner on Sunday afternoon. Later that night, we would send my brother out to pick up pizza for supper. We sure ate a lot back then!

Today I made a one meal dish around 4 PM that satisfied our evening meal requirement and called it dinner.




1 lb. ground turkey

1 medium onion, diced

1 green pepper, diced (optional)

1 clove garlic, chopped 

2 teaspoons salt

2 14.5 oz. cans petite diced tomatoes

1 15.5 oz. can kidney beans, drained

1 TB chili powder

1 TB paprika

1 TB cumin

1 generous spoonful of salsa

(Cooked rice, tortilla chips, cheese and more salsa for serving if desired)


In large frying pan, add ground turkey, onions, peppers, garlic and salt and saute on medium high. 






Add salt. Keep stirring until turkey is cooked through. 




Lower heat to medium, add paprika, chili powder, and cumin.





Add tomatoes, beans and a spoonful or two of salsa. Continue cooking until everything is heated through. Taste and adjust seasonings as you like.


I put my rice cooker to work and made a batch of white rice.
 We put some rice in a bowl, added the chili, and topped it off with shredded cheese and tortilla chips.
