Merry Christmas, you wonderful ol' tunnel of fudge!





 

Oh! That Fudge!



Tunnel of Fudge Cake


1 3/4 c. sugar

1 3/4 c. butter, softened

6 eggs

2 c. powdered sugar

2 1/4 c. flour

3/4 c. unsweetened cocoa

2 c. chopped walnuts (my recipe says the nuts are "essential" - I don't know if that's an opinion or fact)


Glaze

3/4 c. powdered sugar

1/4 c. unsweetened cocoa

1 1/2 - 2 TB milk


Preheat oven to 350 F.

Grease and flour a 12 cup bundt pan or a 10 inch tube pan. 

In a large bowl, combine butter and sugar and beat until light and fluffy.


 Add eggs, one at a time, beating well after each addition. 



Gradually add powdered sugar and mix well. 




Stir in flour, unsweetened cocoa, and chopped walnuts. 





Spread in prepared pan. 



Bake 1 hour. The cake will not test done, so remove from oven after 60 minutes.

Cool in pan on a wire rack for 1 hour. Invert, remove cake from pan, and cool completely.

For the glaze, blend powdered sugar and cocoa and add just enough milk (only 1 1/2 to 2 tablespoons) to make a glaze. Spoon over cake and drizzle down sides.

Zucchini Noodle Chicken

The last time I went food shopping I put a package of zucchini noodles in my cart and had no idea what I was going to do with them. 

I created this recipe today and thought it was rather tasty. You can shred the zucchini with a grater or food processor if you don't see a pre-packaged version in the market.

 

Zucchini Noodle Chicken

 




Ingredients:

1 pound boneless chicken breasts

2 eggs, beaten

2 cups dry breadcrumbs

1 tsp. garlic pepper seasoning

¼ cup olive oil

1 TB butter

 ½ cup mushrooms, cleaned and sliced

2 cloves garlic, sliced

1 TB butter

16 ounces of zucchini noodles (about 4 cups)

1 c. water

1 tsp. beef bouillon granules

fresh thyme leaves and freshly ground black pepper for serving


Slice a pound of chicken breast into serving sized pieces and pound into about ½ inch thick pieces. Set aside.

With a fork, beat two eggs in a shallow bowl. Combine two cups of breadcrumbs with a teaspoon of garlic pepper seasoning and set aside. 



Dip the chicken pieces into the egg mixture and then dredge the chicken in the breadcrumb mixture, pressing with your fingers to coat well on both sides. 



In a frying pan, heat 1/4 cup of olive oil and a tablespoon of butter on medium high heat. Add chicken pieces, reduce heat to medium, and saute about 4 minutes per side. Turn off heat and set aside.



In separate frying pan, add a tablespoon of butter and saute the mushrooms and garlic. 





Add a cup of water and a teaspoon of beef bouillon.
 Add zucchini, cover, and cook for 6 minutes until tender.




To serve, place a mound of zucchini on plate, top with chicken, and sprinkle with fresh thyme leaves and black pepper.

Simple Sunday Supper

 In the old days, my mother would make a big dinner on Sunday afternoon. Later that night, we would send my brother out to pick up pizza for supper. We sure ate a lot back then!

Today I made a one meal dish around 4 PM that satisfied our evening meal requirement and called it dinner.




1 lb. ground turkey

1 medium onion, diced

1 green pepper, diced (optional)

1 clove garlic, chopped 

2 teaspoons salt

2 14.5 oz. cans petite diced tomatoes

1 15.5 oz. can kidney beans, drained

1 TB chili powder

1 TB paprika

1 TB cumin

1 generous spoonful of salsa

(Cooked rice, tortilla chips, cheese and more salsa for serving if desired)


In large frying pan, add ground turkey, onions, peppers, garlic and salt and saute on medium high. 






Add salt. Keep stirring until turkey is cooked through. 




Lower heat to medium, add paprika, chili powder, and cumin.





Add tomatoes, beans and a spoonful or two of salsa. Continue cooking until everything is heated through. Taste and adjust seasonings as you like.


I put my rice cooker to work and made a batch of white rice.
 We put some rice in a bowl, added the chili, and topped it off with shredded cheese and tortilla chips.

Getting Fresh

It's amazing how fresh herbs transform a dish. Instead of my tired old rice pilaf, last night I made a Spinach-Rice Pilaf that uses fresh dill. Yum. The recipe is from Jim Botsacos, chef of New York's acclaimed Molyvos Restaurant, in his book The New Greek Cuisine. The book is not new - it was published back in 2005 - but it features some fabulous recipes. If you're a fan of Greek cuisine, you'll love these dishes. I served the rice with Pan-Roasted Sirloin that's also in the book and featured below.



3 cups chicken stock

1/4 cup plus 3 TB olive oil

2 cups finely diced onion

coarse salt and freshly ground pepper

1 1/2 cups finely diced peeled, seeded very ripe tomatoes (I omitted)

1 1/2 cups long-grain white rice

1/2 pound fresh spinach (stems removed and cut into 1 inch pieces - I didn't)

 grated zest of 2 lemons

2 tablespoons chopped fresh dill

2 tablespoons unsalted butter at room temperature


Preheat oven to 400F.

Place the stock in a saucepan over medium heat and bring to a boil. 


Lower the heat enough to just keep the stock very hot. Heat 3 tablespoons of the oil in an ovenproof saucepan over medium-high heat. Add the onion along with a pinch of salt. Cover and cook, stirring frequently, for 10 to 12 minutes, or until the onions have sweated their liquid and not taken on any color. 




At this point, add the tomatoes and cook for 5 minutes. Add the rice and stir to coat. Season with salt and pepper to taste.



While the onion mixture is cooking, heat the remaining 1/4 c. olive oil in a large saute pan. Add the spinach, a couple of handfuls at a time, and cook, lifting and tossing, for about 5 minutes, or until the spinach is just cooked.


Season with salt and pepper to taste. Remove from heat.

Chef indicates to place spinach in a colander to drain and, when cool enough to handle, use your hands and squeeze out all excess liquid. (I did neither of these.) Set aside.

Add the hot stock to the rice, raise the heat, and bring to a boil. 


Immediately lower the heat to a bare simmer. Taste and, if necessary, add more salt and pepper. Cover and place in the preheated oven. After about 10 minutes, uncover and check the liquid level. When the liquid is at the same level as the rice, fold in the reserved spinach. 

Bake for about 20 minutes longer, or until all of the liquid has been absorbed and the rice is tender. You might want to check after 12 minutes to see how the things are progressing, but don't stir, says chef.



Remove the pan from the oven and let the rice rest, covered, for 10 minutes. Uncover and fluff with a fork, then fold in the lemon zest, dill, and butter just before serving with Pan-Roasted Sirloin featured below.

















Two 16-ounce sirloin steaks with about 1/8 inch fat remaining around the edge

3 tablespoons extra virgin olive oil

1/2 teaspoon granulated garlic

1/2 teaspoon dried Greek oregano

coarse salt and freshly ground pepper

eight 1/2 inch-thick slices ripe beefsteak tomato

2 small bunches of watercress, tough stems removed

2 tablespoons Kalamata Vinaigrette (recipe follows)

Lightly drizzle each side of the steak with a total of 1 tablespoon of the oil. Season with garlic, oregano, and salt and pepper to taste.



Place a heavy skillet (cast iron is terrific) over medium-high heat. When hot, add 1 tablespoon of the remaining olive oil to the pan and, when very hot but not smoking, add the seasoned steak. Sear, without moving the meat, for about 5 minutes, or until a crust has formed on the bottom. Turn the steak, lower the heat to medium, and continue to cook, basting continually with the pan juices, for about 8 minutes, or until medium-rare (135 degrees on an instant-read thermometer). 



Transfer the steak to a cutting board and let rest for 5 minutes. Reserve the pan juices. Using a sharp knife, cut off the fat and then cut the steak diagonally into 1/2 inch thick slices.

 


Place 2 slices of tomato on each plate. Drizzle with the remaining tablespoon of olive oil and season with salt and pepper to taste. Place the watercress in a medium mixing bowl. Add the Kalamata Vinaigrette and salt and pepper to taste, tossing to coat well. Make a small mound of watercress salad next to the tomatoes. Layer an equal portion of the sliced steak in front of the salad, drizzle the meat and plate with pan juices, and serve.








2 tablespoons red wine vinegar
1/4 cup Kalamata vinegar 
3 TB thyme honey 
1/2 teaspoon dried Greek oregano
1/2 teaspoon coarse salt, or to taste
pinch of freshly ground pepper
1 cup extra virgin olive oil

Combine the vinegars, honey, oregano, salt and pepper in a small mixing bowl. Whisking constantly, add the oil in a slow, steady stream, beating until the mixture is emulsified. Taste and, if necessary, season with additional salt and pepper.

Store, covered, at room temperature until ready to use. Whisk briefly before using. 

(In full disclosure, I did not have Kalamata vinegar or thyme honey on hand. I used white vinegar in place of Kalamata vinegar and organic raw honey in place of thyme honey.)

Oven Pot Roast



I came across this recipe in my files yesterday and it certainly took me back.

In the interest of full disclosure, I found this recipe on epicurious.com. I noted it on the recipe and also wrote this: 

"Delicious! Kids loved it! Ages 17, 16, and 13."

My oldest and middle child were in high school and my youngest was in middle school. That was only nine years ago? It seems like forever! A lot has happened since then, but this recipe is still a winner. 


Oven Pot Roast

4 lb. pot roast

2 tsp. salt

3/4 tsp. pepper

2 TB vegetable oil

2 large onions, chopped

2 large cloves garlic, finely chopped

1 TB tomato paste

1/4 tsp dried thyme or 1 tsp. fresh  

1/4 tsp. dried rosemary or 1 tsp. fresh

1 1/2 cups dry white wine

1 c. water


With a paper towel, pat dry the beef and rub it with 1 1/2 teaspoons of salt and a 1/2 teaspoon of pepper. Heat oil in an oven proof 5 quart heavy pot over medium high heat until hot. Brown meat on all sides (~15 minutes), then remove to a plate. 



Add onions to the pot and saute until pale golden (~10 minutes).




Add garlic, tomato paste, thyme, rosemary and the remaining 1/2 tsp. salt and 1/4 tsp. pepper and cook, stirring, for 2 minutes. 





At this point, with this opened can of tomato paste with only one tablespoon removed, you may start to think about waste. I think about it. I think that I should put tablespoon-sized dollops of it onto a piece of waxed paper and freeze for later use. I don't have any waxed paper so I think I could use plastic wrap. Then I realize that I will forget all about those dollops in the freezer and I'll never have any use for them anyway because I rarely use tomato paste and a can of the stuff is pretty darn cheap anyway if I really need it.




Add wine and water and bring to a boil.





Return beef to the pot and cover tightly. Place in a 325 F oven.

Turn once after an hour, cover again, and braise until tender - 2 1/2 to 3 hours. Remove from oven and let stand 30 minutes. Serve with egg noodles.
